Louisiana Famous Fried Chicken: Q&A with Melvin Ellis

What is the background story of your business? When/how was it created?
Starting a business has been a dream of mine. I was born and raised in Akron, then I  served the US Navy for 9 years. I didn’t go exactly right back to Akron. I was employed in the oil industry on the west coast. Louisiana Famous Fried Chicken is a licensed franchise that exists in the western part of the country and in the south. We didn’t have anything in Ohio similar to it. I’ve always enjoyed the product and the taste of the product so I was looking to do something in Ohio, particularly Akron. I had some land on Copley Road, but I decided to buy an existing building. That was something my franchisee/corporate representative recommended. In 2017, I was back in Akron and the vision took off from there. My goal still will be to go to Copley Road. We have about 20 to 25 employees and we’re moving things forward.
How has your business experienced growth?/How do you expect to see growth?
My customer base has peaks and valleys. Particularly in winter months, the weather provides challenges. All in all, as far as my team and operations, we’ve seen growth as it relates to the pandemic. All of my employees came back. I thought that was fantastic because I thought was going to be a big challenge, especially with unemployment funding. The city has been extremely supportive, especially the Firestone Park community. We’ve always had a great customer base and we’re just trying to grow the brand in the region. I think we’re one of the “best-kept secrets in Akron.”
What got you into the food business?
I’ve always been interested in being an entrepreneur. Growing up in the region, I always thought this was a good opportune place for a business venture.  I grew up with my Operations Manager and he’s a part of this story as I am. He has a tremendous amount of experience in the foodservice industry. I knew I could work with him provided we get an opportunity to move the process forward.
How has the pandemic impacted your business?
We’ve assembled a great team. What we went through with COVID-19, it taught me a lot about what we have. We are very grateful. We just got back in operations on June 10th.  It impacted us greatly but we are happy to be back. When something like this happens, as a business owner, you have to retrain your thinking surrounding the business. I did receive a PPP loan and that was tremendously helpful!

How has the Greater Akron region played a role in the evolution of your company/career?
When we first opened, we received an outpour of support. We had to make some changes to what they offered at the restaurant on the west coast and in the south. People embrace spicy food a bit more in other places. We had to make product adjustments and just give customers what they want. Now, you can get our food with spice or no spice. We also aren’t a traditional chicken place, we also offered breakfast. The customers in this region definitely play a huge role in our offerings and ultimately our success.
Do you have any advice for growing a business in Akron?
It’s always great to utilize the Chamber and other entities for networking and resources. I knew I should have joined the chamber when I first opened, but unfortunately, I didn’t. It was an opportunity that we missed out on initially. I missed out on resources and networking with other businesses. One of the first Chamber events we attended, we met the organization Haven of Rest Ministries. From that day, we developed a very beneficial partnership with them. One of the things I know about business now, it’s always good to have resources and to work with other people. Everybody can help each other out.

what’s new
Aside from Popeye's, this has got to be one of the best fried chicken that I ever had. It reminds me so much of my hometown near Louisiana and the people that used to cook it especially my grandmother. I come back to this place every now and then and get a bucket or two for me and my friends so that we can eat after a very hard night of drinking.

I love the chicken here. I always come here after a hard day's work. It has always given me comfort and a taste of my mother's home cooking. I will never get fried chicken from any other place than this one. Plus, the employees there are so friendly and they always give me extra sides to go.
